Malort and sushi may not seem like a natural pairing, but you would be mistaken—especially since some of the best sushi is crafted at CH Distillery, home of Chicago’s most famous bitter spirit and Joto Sushi.
However, our focus is not to argue that Marlot actually pairs well with sushi, but rather to tell you about an exciting omakase dinner at Joto Sushi that merges with another sought-after spot.
Next Thursday, Joto Sushi will host a special Japanese-Korean omakase dinner in collaboration with their West Loop neighbors, Perilla FARE.
Joto Sushi is known for its high-quality dry-aged sushi and a selection of drinks available at CH Distillery’s bar. On the other hand, Perilla FARE, the beloved Korean-American restaurant and steakhouse from Chef Andrew Lima—the 2026 Jean Banchet Chef of the Year nominee—offers an incredible menu. Now, you don’t have to choose between them; you can enjoy a combination of both. How enticing does that sound?

The special Joto Sushi x Perilla FARE courses include:
- Beet Tartare: Smoked beets, egg yolk jam, Asian pear, smoked trout roe
- A5 Ssam Bite: A5 Miyazaki striploin, seasoned rice, kkaennip muchim
- Kimchi Pancake: Golden Kaluga caviar, sesame crème fraîche, shiso flowers, chive blossoms
- Jjajang Croquette: Guanciale, cucumber (1pc omakase, 3pc à la carte)
- Joto dishes include: Akami, Kama Toro Uni, Kinmadai, Otoro Caviar, Wagyu Gyoza, and Zuke Sake.
