
There is so much to celebrate about Bonyeon, an omakase spot that incorporates Japanese culinary techniques to provide a unique steak omakase experience. Recently, the team has begun a series of collaboration dinners with some of Chicago’s most beloved chefs. This time, they are featuring Chef Jennifer Kim from Proxi.
Proxi is one of the hottest places to dine in Chicago; just last year, it was awarded the prestigious 2024 Michelin Bib Gourmand. The restaurant is renowned for its bold flavors inspired by various Asian cuisines, including Vietnam, Thailand, Cambodia, Malaysia, Indonesia, Japan, and Korea.
Now it’s bringing its style to Bonyeon for a one-night-only event. On Thursday, May 22, HIS Hospitality will host Chef Jennifer Kim at the Bonyeon chef’s counter for a specially curated dinner featuring coastal Asian flavors and Korean-inspired luxury proteins.
The evening will consist of nine thoughtfully crafted courses, including beef tartare, Korean pancake with kimchi and quail yolk, grilled rice cakes with fish sauce caramel, A5 sirloin with apricot ssamjang and pickled fiddleheads, and dry-aged halibut jjigae with smoked kanpachi stock and spring peas.
