PopUp Bagels is expanding across Illinois, and the first store is set to open in Lincoln Park today, April 17th.
The reason PopUp bagels has become a viral sensation is that they serve hot, whole bagels straight from the oven—never sliced or toasted—intended to be torn apart and dipped into various schmears.
Since its debut in Connecticut in 2021, PopUp has evolved from a backyard window into a viral company known for its hot, whole-bagel and weekly schmear flavors, as well as its impressive brand collaborations.
This marks their Midwest debut and the first of 25 planned locations across the Greater Chicago area.

To celebrate its launch, the brand is partnering with Portillo’s to introduce a limited-time Giardiniera Schmear, paying homage to one of the city’s most iconic flavors.
