The wait is over for pastry lovers in Chicago—Guillotine Bakery has finally launched its permanent storefront after months of anticipation!
Here are all the details.
Guillotine grand opening

Guillotine Bakery opened its doors at 1711 W Chicago Ave. at 9 a.m. on Wednesday, June 17.
The brainchild of bakers Vincent Didry, Alizé Bikard, and Vince Le Bec, the shop has garnered tons of buzz recently, following a successful pop-up run earlier this year.
Guillotine’s opening coincides with a broader trend of boutique pastry shops popping up all around Chicago, including the likes of Del Sur and Daeji Dough Company.
Guillotine promises to shake up the booming local pastry scene, focusing on traditional French treats with a modern twist.

Whether you’re looking for Kouign-amanns and Pain au Chocolats, or creative croissants and handmade breads, there’s something for every palate.
Interested in trying Guillotine’s selection? The bakery is now open Thursday through Monday at 7 a.m.
And you’ll want to get there early—lines typically stretch down the block.
