A new bakery is gearing up to take over the Chicago pastry scene—and giving guests the chance to try treats from the menu before the grand opening!

Guillotine x Mindy’s
Guillotine Bakery is the latest up-coming addition to the Chicago culinary scene.
The shop is the brainchild of French baker Vincent Didry and his team Alizé Bikard and Head Baker Vince Le Bec.
Guillotine promises traditional French pastries with a high-quality ingredients and a modern twist.
The bakery is set for a debut this spring at 1711 W Chicago Ave.
But first, Guillotine is partnering with popular bakery Mindy’s to introduce its menu for a one-day only pop-up event.
Dubbed the “Monday at Mindy’s” event, the pop-up will feature a host of signature treats from the Guillotine team.
Guests will sample classic pastries like Kouign-amanns, Pain au Chocolats, Croissants, Pain Suisses, and other French delights.
