Boasting some of the city’s most spacious and impeccably appointed guestrooms, The Fairmont Chicago in Millennium Park will host a four-course meal paired with top-notch rum drinks courtesy of Bruno Mars’ rum company SelvaRey Rum.
From 6:00 pm to 8:00 pm, SelvaRey Rum will take guests on a storytelling journey learning about each rum-based cocktail as they simultaneously indulge in a delectable four-course menu that boasts “unique seafood dishes with sweet and eclectic twists, and a mouthwatering caramelized tart for dessert.”
With sweeping views of Downtown Chicago, Millennium Park, Lake Michigan, and the stunning Chicago skyline the Fairmont offers both stunning spectacles and an elegant interior which together provide “the epitome of urban luxury”.
SelvaRey Rum, meanwhile, which is co-owned by the Grammy-award-winning artist, is crafted by the world’s most renowned Maestro Ronero. Born on a single estate in the jungles of Panama, it claims to be “the smoothest rum you’ll ever taste” and offers “a vacation in a glass” with its bold range of flavors.

The four-course menu is as follows:
1st Course
Shrimp
Corn fritter, lime, cilantro, and habanero aioli paired with Coconut Island Oasis, featuring SelvaRey Coconut Rum.
2nd Course
Scallop
Ceviche, tajin, coconut milk, and vanilla paired with Por Mi Amante, featuring SelvaRey White Rum.
3rd Course
Flat Iron Steak
Cocoa-dusted, crushed plantains, tomato herb salad, and chimichurri paired with Chai Thai, featuring SelvaRey Owner’s Reserve.
4th Course
Banana
Caramelized tart, candied pecans, and crema paired with Chunky Cocoa, featuring SelvaRey Chocolate Rum.
Tickets, which can be purchased via Exploretock are $99 per person and include all food and drinks from 6 pm until 8 pm.
