Sushi-san in Lincoln Park is bridging the gap between Chicago and the Far East this October, launching the third edition of its popular Tokyo Last Call cocktail series.
The month-long pop-up will spotlight some of Japan’s most acclaimed bars at its lower-level “Dojo” speakeasy.
Here’s a sneak peek at the lineup and where to reserve a spot.
Tokyo Last Call: Season III at Sushi-san

Tokyo Last Call: Season III will bring a different guest bartender to Sushi-san’s Dojo lounge each weekend from October 8 through November 8.
The program is expertly curated by beverage partner Kevin Beary, known for his work with other popular spots like Three Dots and a Dash, along with bar manager Scott Kitsmiller.
The 2026 edition of the pop-up is particularly special, as it will feature an entirely Japan-based lineup of visiting bartenders for the first time.

“Each of these spots reflect the depth and diversity of Japan’s cocktail culture,” said Beary. “It’s a rare opportunity for Chicago guests to experience some of Japan’s most exciting bar talent all in one place.”
Each guest bartender will craft a selection of 4 cocktails using spirits from renowned Japanese beverage brand House of Suntory. Here’s the full schedule:
- Week 1 (Oct 8–11): Bar Nayuta (Bartender: Hiro Nakayama)
- Week 2 (Oct 15–18): Cocktail Stand Furek (Bartender: Ryuichi Saito)
- Week 3 (Oct 22–25): Bar Trench (Bartender: Rogerio Igarashi Vaz)
- Week 4 (Oct 29–Nov 1): The Bellwood (Bartender: Cole Nunley)
- Week 5 (Nov 5–8): Punch Room Tokyo (Bartender: Yas Kawakubo)

Tokyo Last Call: Season III will be open Thursday and Sunday from 5:00 p.m. – 11:00 p.m., and Friday and Saturday from 5:00 p.m. – 12:00 a.m.
