As soon as you step into Eataly Chicago, you’ll be transported to a rustic scene, feeling as if you are in a traditional baita, or cabin, found all over the Italian Alps. Feel the coziness of an après-ski retreat, as if you’re on a fantastic ski trip in the snow-covered mountains, filled with Northern Italy’s hearty and comforting cuisine.
The menu takes you on a trip to Northern Italy
The new winter ALPINA Menu draws inspiration from the beautiful food and beverage traditions of Northern regions in Italy, as well as neighboring Alpine areas.
One of our favorite highlights while visiting this dreamy winter oasis had to be the Polenta Bar. This Northern Italian staple is a creamy, stone-ground cornmeal served on a wooden board with a choice of decadent toppings like Ragù di Carne, Ragù di Funghi, Salsicce e Funghi, Short Ribs Ragù, or Goulash.
Of course, when we envision the perfect trip to the Italian Alps during a ski vacation, we mustn’t miss the Fonduta di Formaggio—Italy’s delicious take on Swiss fondue, which you can try at the experience in Chicago. Their version is made with Fontina DOP cheese and served with focaccia croutons for dipping.
Other not-to-be-missed savory top picks when visiting the ALPINA pop-up this winter include the Patate all’Ampezzana. These sautéed potatoes are a beloved Alpine side dish for a reason and topped with crispy speck (a deliciously cured, slightly smoky ham), rosemary, and chives.
Be sure to try the Canederli, bread and speck dumplings from the Trentino-Alto Adige region in northeastern Italy served with black truffle butter. These dumplings are similar to Germany’s popular bread dumplings. From the Valle d’Aosta area, famous for its medieval castles and charming Alpine villages in Northwest Italy, you must try the Cotoletta Alla Valdostana—a breaded chicken cutlet stuffed with Mila Alta Badia cheese, Prosciutto Cotto, and sautéed spinach.
For a sweet indulgence, the Fonduta di Cioccolato features a rich, warm chocolate fondue made for two, served with fresh strawberries and biscotti.

The ALPINA cocktail menu perfectly complements the hearty cuisine, featuring the classic Hot Toddy, great for those unbearably chilly days in Chicago. We also recommend trying the Bombardino, the Italian take on eggnog, along with favorites like the Strawberry Rhubarb Spritz. Wine lovers must try some of the best wines from Italy’s famed Northern regions as well.
