Chicago’s West Town has always been known for its distinguished bar scene, and it is set to welcome a new addition that promises a rosy, dreamy escape.
Opening on February 14—just in time for Valentine’s Day—Bar Bambi marks the first solo venture of Katie Renshaw, one of the city’s most acclaimed bartenders.
The 1,200-square-foot bar, which seats 50, aims to be a whimsical destination featuring playful bites and expertly crafted cocktails. This makes sense, considering that Katie Renshaw has worked behind the bar at several of Chicago’s most respected establishments, from the Billy Sunday to The Aviary. Renshaw has also earned national accolades, including the Italicus Bar Artist of the Year and the prestigious U.S. World Class Bartender of the Year.

Opening my own bar has been a big dream since the moment I started bartending.
Everything I’ve learned in the Chicago industry, including from some incredible folks who helped build the bar scene in this city, has influenced what Bar Bambi has become. I love what I do, and being able to bring that joy and love into all of the little things that make up a bar and share it with the world is an honor.

Inside the dreamy new cocktail lounge
Located at 1703 W Chicago Ave, just steps from Chef John Manion’s Brasero and Chef Marcos Campos’ Beatnik, Bar Bambi aims to make waves in Chicago’s cocktail scene, with drinks taking center stage.
Renshaw’s cocktail menu plays with flavor, texture, and form while prioritizing seasonality and sustainability by cross-utilizing ingredients with the kitchen.
Notable cocktails include the Three Decibel Rule, made with Ketel One vodka, Cocchi Americano, lychee, yellow bell pepper, and crème fraîche, clarified and served freezer-cold. And the Repeat Offender, a carbonated blend of Ford’s gin, Campari, apricot, jasmine, and tonka bean.
While Bar Bambi is cocktail-forward, the food promises to impress as well. Renshaw has collaborated with Chef Nicklus Byrns, whose craveable, chef-driven bar snacks are designed to complement Renshaw’s creations. Highlights include a contender for Chicago’s “Best Fish Sandwich,” made with crispy halibut, triple pickle sauce, white cheddar, and shredded lettuce on a toasted brioche bun.
Bar Bambi will be open Thursday through Monday, with late night on weekends.
