Chicago or New York? Fulton Market’s newest pizzeria won’t make you choose.
Pizzeria Gabbo officially opened! The newest hotspot serves Chicago Thin & Crispy and New York Crispy pies under one roof.
TThe restaurant comes from Lettuce Entertain You’s Marc Jacobs and Chef Partner Andrew Ashmore (Antico Posto, Beatrix, and L. Woods Tap & Pine Lodge). Alongside pizza, the menu features antipasti, housemade pastas, Italian spritzes, and wines from family-owned, sustainable producers.
“Pizza holds a special place in Chicago’s history and we’re excited to share our take on both Chicago and New York-styles,” Jacobs says.
Two pizza styles, one menu
Gabbo’s menu features more than 10 pizzas across its two signature styles, both made with premium organic flour.
The Chicago Thin & Crispy pies come square-cut, with toppings stretching edge to edge. Options include Fennel Sausage & Giardiniera and the Chicago Supreme.
For the New York Crispy pies, Ashmore uses a proprietary three-flour blend and dough that rests for about 48 hours before baking. The result is a lighter, airier crust with a crisp finish, sliced into triangles. Look for combinations like Golden Potato, Lemon & Rosemary, or keep things simple with the Tomato Pie. Gluten-free crust is also available.

Pepperoni chips, housemade pasta, and pistachio soft serve
There’s plenty to try beyond the pies. Starters include slow-baked Pepperoni Chips served with house marinara and Butternut Squash Croccanti with Calabrian chili aioli and housemade giardiniera.
The pasta lineup includes Light Lemon Fettuccine Alfredo and Slow-Cooked Chicken Bolognese Rigatoni.
For dessert, housemade soft serve gelato comes in Roasted Pistachio, Milk Chocolate, or a swirl of both. The Gabbo-Style Sundae adds candied orange honey and pistachio praline. A street-facing soft serve window is also slated to open soon for gelato to go.
Italian spritzes and more than 20 wines by the glass
Senior Sommelier John C. Slatter, whose portfolio includes Aba and Ema, built a list of more than 20 Italian and domestic wines by the glass. The selection spotlights Campania, the Italian region known as the birthplace of pizza.
Beer drinkers can choose from Italian regional lagers and bocks alongside craft options from Chicago and Cincinnati.
Senior Beverage Manager Nicholas Berggren’s cocktail menu includes spritzes featuring aperitivi from Italian Spirits Co., plus these signature drinks:
- Sfizio: a savory, Darjeeling-infused take on a gin gimlet.
- Al Fresco: a citrus-forward cocktail inspired by the Amalfi Coast.
- Margherita: a tequila-based drink infused with micro basil and sundried tomato.
- Garibaldi: a lower-ABV option.
Zero-proof choices include house Limonata, the spritz-like Crodino, and Kirra canned iced teas.
A cozy dining room with a view of the kitchen
Designed by Lettuce’s in-house team, the dining room features wood details, milk glass chandeliers, and leather booths, alongside an eight-seat bar.
